Julia Child once said, “Wine is one of the agreeable and essential ingredients of life.” So, to celebrate National Wine Day, May 25th, Modern Plate is kicking off the first in our series of monthly wine pairing posts that we will be presenting over the next few months.
Let’s start by looking at our most popular dish, the Herb Braised Boneless Short Ribs and Smokey Mashed Potatoes. You want something bold enough to stand up to the short ribs, but not so bold it overpowers the mashed potatoes, and we think Côtes du Rhône fits the bill. It is from the southern part of the Rhône region in France and makes up two-thirds of the wine in this region. Côtes du Rhône is known for being a full-bodied red, but they also make lovely Roses and Whites well worth seeking.
Let’s jump over to our Chimichurri Chicken with sauteed peppers & onions, spiced rice, cotija black beans, and tortillas for our next pairing. With all of the flavors and spices in this dish, we think something crisp and chilled would make an excellent addition to this meal. That’s why we’re traveling to the Bordeaux region of France and the Sauvignon Blanc. This is a crisp, dry wine that is very popular and easy to find. It is rarely aged in oak, allowing the fruity characteristics to shine through!
